Methods applied in Brewing industry for the determination of polyphenols.Peer-reviewed article

Polyphenol substances contained in malt and hops have an important role in the brewing process. It is therefore necessary to apply for their determination reliable methods. The authoresses outline briefly the history of methods which are used at present in brewing industry for the determination of polyphenols and antocyanogens, criticize their weak points and recommend to replace them with modern ones. Only methods recognized by international conventions on analytic methods should be used. The methods elaborated by Jerumanis meet all requirements and will be dealt with in a separate article. Beside fundamentals of methods and technique employed for the determination of polyphenols and antocyanogens the article deals also with the results of some recent research works in which new methods were used both for separation and identification of polyphenols.
