Some problems of proteins of malting barley.Peer-reviewed article

The article is essentially a survey of works dealing with effects of modern agrotechnical metods upon the proteins present in malting barley. The higher percentage of proteins bears upon the quality of barley, malt and beer and has also its important economic side. Modern agronomy prefers short-stemmed barley varieties, which unfortunately have the maize growing districts some undesirable properties due to the specific climatic conditions prevailing there. Because of steadily increasing protein content in malting barley the workers of malting industry insist now on the introduction of binding standard regulating the relation between the purchase price of barley and its protein content.
