Sanitation circuits in breweries.Peer-reviewed article

Mechanized sanitation service in a brewery can be organized in two different ways, viz.: either by operating one central sanitation station, responsible for the whole brewery, or by having several stations, i.e. one for each of the departments. Each of the systems has its specific advantages and disadvantages. One of important merits of decentralized system is the absence of any interdependence between individual stations, which eliminates proliferation of any contamination from one part of the brewery to others. It is also easy to adjust sanitation operations, i.e. their character, sequence atc. to various cycles of brewing process. From the sanitation point of view the brewery can be split into the following sections: brewing house with wort cooling plant, fermenting room, storage cellar, propagation station, filtering plant with intermediate tanks, bottlery.
