To achieve higher productivity in yeast plants and improve further the quality of their products it is necessary to introduce new processing methods and modernize technical equipment of plants. Very efficient are new types of fermenters with integrated and improved aeration systems. The article deals with several examples of well designed aeration systems permitting more efficient processing of high concentration mash and bringing thus higher yields of biologic mass. The author describes also modern fermenters, their feeding and discharging mechanisms and resulting technologic advantages. Several paragraphs deal with new equipment installed in the Trenčín yeast plant. It serves not only for producing conventional baker s yeast but also active dry yeast.
