Application of isotachophoresis for distinction of acids in wine.Peer-reviewed article

The article contains results of the determination of organic acids by isotachometric analysis in the modification by Polanský and Farkaš in samples of South-Moravia wines from a region Bzenec, Velké Pavlovice, Mikulov, and Znojmo. The wines from peripheral regions have lower content of tartaric acid. The wines from a bad year 1980 also had a lower content of tartaric acid but on the other had they had a high content of malic and lactic acids. The authors consider isotachophoretic analysis very suitable for a quick identification and determination of organic acid contents in wine. An application of this method would make possible the desired interferences into technological procedures.
