A present evolution of ecological conditions has a negative effect of properties of water resources which can cause changes in the malting and brewing technology as well as in a quality of final products. After a recapitulation of principal properties of process water, the author discusses the effects of the individual components of a chemical composition of water in the individual components of a chemical composition of water in the individual stages of the process proper. Further, present procedures of water treatment from the standpoint of a chemical composition and water sterilization are described. At the end, the author found that the unsuitable evolution of the water resources quality all in the world makes necessary to improve the water control.
