Our present understanding of the nature of yeast cell wall is based on the information obtained from chemical and biochemical studies, including enzymatic digestion of wall and from cytological investigations. In this connection, this review deals with the development of our knowledge of the basic structural components and biochemistry of yeast cell wall. Attention is also paid to the biosynthesis of principal polysaccharide components as well as cell wall biosynthesis. In addition, the article covers briefly the major aspects of cell wall biodegradation by exogenous lytic enzymes, especially by gastric juice by the garden snail, Helix pomatia.
