Production of single cell protein from whey.Peer-reviewed article

The article deals with fermentation of acid and sweet whey, and ultrafiltered whey by yeast. Some of yeast species are able to utilize lactose and produce amount of biomass rich in protein. The yeasts were grown by batch and continuous cultivation, the optimum conditions for fermentation as temperature, pH, nutrient concentration and aeration were determined. The best results were achieved with strains Candida humicola, Torulopsis candida, Kluyveromyces lactis and Kluyveromyces fragilis, yielding 27-33 g dry biomass per liter of whey. The protein content of biomass was found to be 48-57% and the amount of protein was increased by fermentation 3.5-4 times.
