Zygosaccharomyces bailii - a harmful constituent of the microflora of bottled wines.Peer-reviewed article

Based on long-term investigations on the yeast flora of wines with residual sugar the occurrence of Zygosaccharomyces bailii in bottled wines could be confirmed. Causes of occurrence and possible localities in the wineries and suitable measures for the elimination of these yeasts are shortly discussed
