An information study of ergosterol content in brewing and baker's yeasts was made. Six methods for the ergosterol determination were tested. As a result the Longley method was used in further work. When a cell disintegration was made prior to the cell hydrolysis a higher ergosterol yield was found. Steroids were isolated from the cell mass by the alkaline hydrolysis with a following extraction by cyclohexane. The ergosterol content in bakers yeast was about 2 to 5 times higher than that in brewing yeasts. It was found that the ergosterol content in brewing yeasts can be 3 to 5 times increased by the following short-term cultivation in salt media with various carbon sources.
