The method of H. Petersen for the calculation and the graphical estimation of the minimum extract quantity in brewer's grains from the standpoint of present costs for a water evaporation during wort boiling is described. A verification of the boundary value has to be made in any brewing house. The end of wort boiling can be made only on a base of the above mentioned boundary value.
