Present state of crushing and mashing techniques.Peer-reviewed article

Advantages and disadvantages of the dry, wet and conditioned crushing are described. The new equipment of Mitl-Star "Supertech" working under a soft conditioning and having advantages of all above mentioned systems is described, too. Further, the construction of mashing tuns permitting a lower oxygen absorption during the procedure is discussed.
