Removal of coarse sludge from hopped wort in the whirlpool tank is often challenging problems cause by a sludge cone disintegration during draw-off and its subsequent removal from vessel's bottom. The paper unveils a new inconventional possibility of concentrated sludge removal which is drawn off from the vessel after it had been filled in a moment when sludge is concentrated in a cone having a small-shaped basis. A device for sludge removal has been designed and tested, the principal features of which is a pneumatic valve, a sensor destined for hopped wort clarity determination and control process computer. Sludges are drawn off from vessel's bottoms centre under fully automatised regime following a programme resulting from introductory operational tests. Program's basic elements are featured and two practical operational examples are given.
