Actual properties of hop ethanol extracts compared to CO2-extracts.Peer-reviewed article

The paper summarises basic data relevant to ethanol hop extracts and CO2-extracts preparation and their properties. A special attention is being given to new products with respect to ethanol extracts production since 1989. A mutual comparison of hops, pellets (90 and PUC - types), ethanol and CO2-extracts is presented with respect to their summary resin, α-acids, ß-fraction contents and their mutual proportion, all concerning Hallertauer Northern Brewer, Hallertauer Perle and Hallertauer Hersbmcker Spät species, harvest year 1995. The highest α-acids to ß-fraction ratio was found at CO2-extracts: the remaining compared preparations posessed a 0,1-0,2 lower ratio. From the presented work can be concluded that the ethanol process application during the new age extracts preparation is not linked with any disadvantages in comparison to carbon dioxide extraction.
