The article brings new theoretical and practical contributions to the research works on giberele acid and its applications. Conditions are specified, under which a combination of giberele acid solution and glucose can accelerate the malting process, so that in five days the same quality of malt can be obtained as in seven days by conventional technology.(In Czech, English summary only)

The article deals with the results of tests, which have been made on laboratory and semi-production scales with a selected stem of B. subtilis outstanding for its exceptional ability to produce great quantities of amylolytic enzymes. The efficiency of preparations in comparison with foreign samples is good. The Wohlgemut numbers are very favourable. Practical applications gave also positive results in comparison with malt extracts.(In Czech, English summary only)

The article deals with the behavior of two various types of baker9s yeasts in saccharose and maltose substrates. The Warburg respirometre was used for studying individual phases of fermentation process, as well as changes taking place in two types of sugar. The results of tests show substantial differences between various types of yeasts. Type IXL is characterized by a kind of inverse proportion between the fermentation rates of maltose and saccharose. Deterioration in maltose rate is accompanied by a sharp increase in saccharose fermentation rate.
