The article deals with some new views on roles of embryo and aleurone layer in the germination process of malting barley. The embryo produces substances belonging to the gibberellins group which diffuse into endosperm and bear upon the formation of enzymes in the aleurone layer. The aleurone layer is therefore the main source of enzymes, not embryo. The aleurone layer is a live tissue.(In Czech, English summary only)
Utilization of waste water from pressure gas works for producing yeast proteins.Peer-reviewed article

To reduce substantially the costs of producing yeast proteins experiments were made with replacing conventional nutritive salts with waste water from pressure gas works. Since the experiments were very successful the method has been introduced on a production scale. Now after one year9s experience the results can be duly evaluated. No deterioration of the quality of the final product was observed. The fermentation was regular without any signs of disturbance. The nutritive nitrogenous salts have been replaced successfully with ammonia containing waste water also at a plant making bakery yeast.(In Czech, English summary only)
Stabilization of wine with metatartaric acid and its preparation.Peer-reviewed article

The results of tests indicate that the metatartaric acid is an outstanding stabilizing agent, preventing precipitation of wine stone in natural wine. By heating tartaric acid to 160-170˚ C and maintaining the indicated temperature for approximatively 1, 5 hr metatartaric acid could be prepared, meeting in every respect all requirements. It secures necessary stabilization and is harmless to organoleptic properties of wine. Its quality is equal to imported chemicals.(In Czech, English summary only)
