Continuous germination in a line differs from the conventional methods in several stages of the process. The time required for making malt is reduced by introducing spray steeping. The germination is based upon periodic pulsations, changing growing and environmental conditions. The quality of malt is very high and can be compared with the very best floor malt.(In Czech, English summary only)
Effect of the presence of false yeast upon baking properties of true yeast.Peer-reviewed article

The article deals with changes of baking properties of true yeast caused by the presence of contaminating false yeast. Contaminating yeast was isolated, identified as Candida robusta, propagated and then tested by employing methods specified in Czechoslovak State Standards (ČSN). Experiments were aimed at ascertaining, whether or not the presence of false yeast deteriorates leavening of dough and stability of yeast. The results of the study indicate that the presence of Candida robusta in proportions up to 10 % [expressed in percentage of biological substance] has no undesirable effect upon baking properties of true yeast, improving at the same time...

The article deals with the organization of quality control at breweries and responsibility of individual components of the system. Some problems of laboratories, as their appropriate equipment, scope of activity, selection of capable personnel atc. are discussed in detail. In closing paragraphs the author suggests some measures which should be taken to improve the standard of inspection at breweries and engage more efficiently the capacitz of laboratories to this purpose.(In Czech, English summary only)
