If the percentage of all kinds of resins is taken as a grading criterion, the quality of hops of 1971 harvest can be classified as very satisfactory. It is practically the same as in 1970. The series of tests which have been carried out conform that - owing to somewhat higher percentage of bitter acids - the amount of hops required for hopping can be reduced / as compared with present rates - by  roughly 5%. This reduction is practical only in breweries using fresh hops. As frech should be considered hops resins does not exceed 15% [of the total amount of resins].(In Czech, English summary only)

The results of preliminary analyses which have been carried out fully justify the expectation that the quality of malt will very good. To produce malt meeting high requirements of foreign markets it is necessary to control strictly all the phases of the malting process.(In Czech, English summary only)

Application of the PRPM microbitest for checking the quality of syrups.Peer-reviewed article

L. ©VORCOVÁ

Kvasny Prum. 1971; 17(12): 279-282 | DOI: 10.18832/kp1971035

The authoress recommends the PRPM Mikrobitest cultivation method as a time-saving technique for routine tests of syrups used for preparing non-alcoholic beverages. She compares the method with conventional ones, i.e. with cultivation in solid media and underlines its advantages. Among the factors which may affect the results twor are especially important, viz. the concentration of samples and their pH. The Microbitest method has proven its accuracy in many branches of food industry and should be, therefore, used for testing syrups, too.(In Czech, English summary only)
