The article deals with the processing of high protein malt in brewhouse and with measure reducing the percentage of coagulating nitrogen in wort: adding tannin into malt mash or wort, adding formaldehyde into mash and finally mashing in at 60°C, The author describes results achieved by maintaining higher temperatures in malt kiln in final stages of drying high protein malt. As the best methods can be considered addition of tannin or mashing at 60°C. These two methods can be combined.(In Czech, English summary only)

Combined malting boxes represent a system which requires comparatively low investment can be easily adapted for automatic operation and ensures good quality of malt. Continuous malting plant of SATURN system incorporating two turning rings requires large quantities of barley and its uniform quality. As far its reliability is concerned, it is less reliable than combined malting boxes. Both systems outlined in the article allow application of growth stimulators. The authors assesses the raw material base which is or can be in near future available for fermentation industry in Czechoslovakia for biosynthesis of proteins and other microbial processes. He takes into account present situation, as effects of capital investments planned for the periods of the 6-th, 7-th and 8-th five years plans. The production of feed protein should be based in Czechoslovakia on sulphite waste liquor and synthetic ethanol. Such an utilization of waste liquor and ethanol is in line with the requirements of national economy and sound development of its various industrial branches. The authors suggests measures which should be taken to provide raw materials for industry making feed for livestock. It is possible to utilize non-traditional raw materials and ensure thus new sources, rich enough for many years. The authors outline methods which can be used to obtain yeast biologic substance from whey or from, whey mixed with ethanol. Manufacturing processes used at present, which differ from one another by sort of yeast strain, fermentation rate and methods applied to separate biologic substance, are compared with a new technology based on fermenting mixture of whey with ethanol. It has many advantages, since the final product has higher dry matter content, which in its turn improves the productivity of the process and makes it more economical.(In Czech, English summary only)
