The authors outline a new gas chromatography method, which has been developed for the determination of volatile substances present in beer. Preparatory operations preceding main analyses consists of distillation by water steam and extraction of distillate by pentane - ethyl ether mixture (in 1:2 proportion). Analyses which have been carried out covered alcohols, esters and fatty acids and have show in the investigated samples the following concentration ranges: alcohols 66.4-125.6 mg/l; esters 13.1-43.4 mg/l; fatty acids 28.6-83.2mg/l.(In Czech, English summary only)
Pressure gauge and praxis of classic straining process.Peer-reviewed article

The authors recommend to use a special pressure gauge to control the course of straining process and thus to optimize it. In a series of experiments they have established a functional spent grains layers and pressure losses in them. Having acquired better knowledge of the mechanism of straining the authors outline principal rules to be observed to control efficiently the straining operation.(In Czech, English summary only)

A brief review of factors influencing foaming tendencies and methods of a foam destroying using in fermenters are given. Additions of surfactants into a cultivation medium to suppress the foam formation significantly affects the oxygen transfer rate from a gaseous to a liquid phase. In the experimental study the effect of the antifoam concentration Struktol OSH on changes in the oxygen transfer rate and foam stability during a batch culture of bacteria was tested.(In Czech, English summary only)
