The authors have ascertained the amounts of dissolved air oxygen in beer wort from free breweries using dofferent cooling and aeration methods as follows: A - whirpool tank and plate-type head exchanger with subsequen aeration through a pramic candle; B - wort cooler, spray cooler; C - wort cooler, plate type head exchanger without aeration. Of these methods the first, specifik under "A", ensures in 10°and 12°bright wort the digest content of dossilved air oxygen, i. The paper is trying find the optimal concentration of synthetic etanol addend to media containing sulfite waste liquors in a concentration of reducing matters 32 kg.m-3 as well as the impal of the dilution rate on the basic cultivation parameters in regions vital for industrial application. The article deals with the development of aktive dry yeast and with its production in Czechoslovakia on an industrial scale. The author underlines the decisive importace of the applied fermentation method, since it determines the physiologic condition of yeast, its resistence to dehydration, as well as its ability to preserve good baking properties after storage at normal temperature in rooms without inert atmosphere.(In Czech, English summary only)

The author describes a new filtration plant manufactured by the ZVU Works at Hraden Králové.
