The possibility of utilization of standard tests with chromogenic substrates was followed by comparing various methods for the determination of activity of amylolytic enzymes in the brewing laboratories. The experiments revealed that the series of ,,Amylochrome Roche" and ,,Phadebas Amylase Test", which determines the amylase activity in using chromogenic substrates, are sufficiently precise, sensitive, and suitable for current application in brewery laboratories. In order to differentiate the α- and β-amylase activity, it is necessary to use another method.(In Czech, English summary only)

Experiments have been carried out to establish, whether sludge from potash plants can be utilized as a source of elements stimulating propagation of Candida utilis yeast cultivated in ethanol substrate. Addition of sludge to nutritive medium resulted in an increased yield. The best results, i. e. yield amounting to 73,3 % (in mass units) and giving therefore an increase of 9,4  %  (in mass units), were achieved by adding 120 mg of sludge to1 lof medium. These figures are equal to0,75 gof sludge per100 gof dry yeast matter. By applying the ASS analysis method it has been established that elements contained in sludge are also present in yeast...

The problem of scaling up is associated with the search of satisfactory method for cases where mass transfer occurs. Geometrically similar line of fermentors is a rare case - items for succesful scale-up are Re, Tmix, P/V, impeller tip velocity and KLa. Relevant is the application of KLa connected with OTR depending on hydrodynamical behaviour and OUR. Succesful work requires cooperation and integration of microbiologists (strain selection, determination of optimum production conditions) and chemical enginers.
