Experimental work is focused on a determination of intracellular proteases in yeasts. An extract of brewing yeast of isolated at first. This extract was divided into proteolytic fractions by gel ion-exchange chromatography. The proteolytic fractions were used for the immunization of rabbits. The antiserums obtained were used for a distinction of antigens in the fractions of yeast autolysate and for a determination of intracellular antigenes of yeasts in beer. A present evolution of ecological conditions has a negative effect of properties of water resources which can cause changes in the malting and brewing technology as well as in a quality of final products. A review of present knowledges referred to a production, properties and genetic determination of the enzyme amyloglucosidase of species Saccharomyces is given.
