Effect of hop storage on changes in its brewing values.Peer-reviewed article

The results of this research project show that the conductometric value can be used for a dosage of hops. Using hop extract in a quantity of about 55 % the conductometric value of hop remained almost constant during 6 months of storage when average conditions of the storage are used. The quantity of hop added would be necessary to increase only after a decrease of the conductometric value of more than 0.6 % (absolute). The results obtained in this research project were verified in a brewery in 1981 and 1982. Dynamic of potassium uptake during a culture of fooder yeast Torulopsis ethanolitolerans on synthetic ethanol were studied. Using a periodical dosage of potassium large variances in its concentration were observed. At the start of the dosage interval the yeasts accumulate am increased quantity of potassium (25-45 mg K+ per 1 g of cell dry weight). At the end of the interval the potassium concentration decreased under the optimal limit and potassium uptake is below 20 mg . g-1. Molasses quality was tested from the standpoint of alcohol and backer's yeast production. Biomass yields obtained from cultures on molasses significantly varied. It was demonstrated by a larger variability in the content of non-carbohydrate fraction in molasses. From the standpoint of a chemical composition following negative factors were determined: a high content of Ca ions, a significant fluctuation in the content of volatile acids, and a presence of nitrites. The effect of an activator of Botrytis cinerea on the Saccharomyces yeast strain isolated from Lowkarpat viticultural area in 1979 and 1980 was tested. The addition of 50 mg of the activator per liter resulted in an increased activity of the must fermentation during the 2nd and 3rd day after the inoculation. The presence of the activator resulted in a lower formation of volatile acids. This is one of the most important parameters describing the quality of a wine produced.(In Slovak, English summary only)
