The aim of this study was to find a simple and as far as possible also an universal method for sample preparations in the metal determination by atomic absorption spectrometry. A dry mineralization in the muffle furnace at 550 °Cand a mineralization in the HNO3-KClO4-H2SO4 (30:7:2) mixture at350 °C for the determination of Ca, Cu, Fe, K, Li, Mg, Mn, Na, Sr and Zn were used. This paper deals with pilot-plant fermentation experiments of grape must and sparkling wine with preparation of active dry wine yeast in vintage 1984. The course and results of fermentations realized spontaneously and biologically by regulated fermentation in total volume 1400 hl, documented the advantage of the "pure" fermentation pathway. Most of the wines fermented with pure yeast cultures may be characterized by higher level of alcohol and lower concentration of volatile acid and acetaldehyde. An analysis of possible inhibitors in molasses has to be made since the fermentation of molasses is affected by the quality of its non saccharide compounds. The method of the capillary isotachophoresis was used to determine the quantity of the individual volatile fatty acids. The individual acids were determined after their separation by the steam distillation. The method was modified for the direct determination of formic and acetic acids only after the dilution of molasses with water.
