Kvasny Prum. 1986; 32(6): 121-124 | DOI: 10.18832/kp1986028
Various methods for the determination of endo-b-glucanase activity are described in a brief literature review. For the use and verification the MEBAK method, using both the Novo substrate as well as b-glucane prepared in Research Institute of Brewing and Malting, was chosen. The method is described in details. The results showed that for a comparison of the values among laboratories it is necessary to use the same method, the same substrate, to keep strictly the conditions of the method and the results must be correlated with respect to the standard malt. For the research needs it is possible to use substrate of its own production, however of the same...
Determination of specific filtration resistence of kieselguhr. II Comparison with the filtrate rate values.Peer-reviewed article
J. VOBORSKÝ
Kvasny Prum. 1986; 32(6): 124-128 | DOI: 10.18832/kp1986029
Values of the specific filtration resistence af are compared with those of filtrate rate P that are still valid for a desecription of the kieselguhr quality. On a base of analyses of 75 kieselguhr samples the linear plot between both the parameters was obtained in the following form P = 17 235 [(afVM)-11011] 1 min-1 m -2, where VM is the moist volume. The actual values can differ from the calculated ones by ± 0.76 % (95 % probability). The method of specific filtration resistance parmits to determine the filtrate rate more accurately without further...
Experiences from American brewing (Part I).Peer-reviewed article
P. FERKL
Kvasny Prum. 1986; 32(6): 128-129 | DOI: 10.18832/kp1986030
The first part of the contribution is devoted to characteristics of the American brewing market and to the quality requirements for basic raw-materials in theU.S.A.The technology is described according to the production flow. The usual procedures and apparatures used in a brewhouse are discussed. The preparation of concentrated worts for high gravity brewing is described.(In Czech, English summary only)

Kvasny Prum. 1986; 32(6): 129-132 | DOI: 10.18832/kp1986031
The causes of a high acidity of water extracts of dried fodder yeasts produced in Seliko Kojetín were studied. The high acidity is affected by phosphates and products of biomass degradation that occurred during a wrong thermal treatment a temperature internal between 40 and50 °Chas be quickly overcome since under these temperatures acidic compounds are produced and excreted from the cells. To obtain the product with a standard acidity it is recommended to heat quickly the yeast cream above80 °Cwith the retention tome of 3 to 6 min immediately after the centrifugation.(In Czech, English summary only)

Wines with low alcohol content represent an important group of natural wines suitable as a completion of rational nutrition and, lacking in calories, also for diabetics. Wines with low alcohol content may by regarded as a desired extension of the assortment of modern innovated wine products, too.(In Slovak, English summary only)
Amino acids production with mutant strains of Brevibacterium sp. M-27.Peer-reviewed article
M. KONÍČKOVÁ-RADOCHOVÁ, F. SMÉKAL, J. KONÍČEK, V. RYTÍŘ
Kvasny Prum. 1986; 32(6): 134-135 | DOI: 10.18832/kp1986033
The mutation of the strains of Brevibacterium sp. M-27 using N-methyl-N´-nitro-N-nitrosoguanidine was studied with the aim to prepare new producers of L-lysine and further amino acids. The work results in a group of auxotroph mutant strains, the pigmented and auxotroph pigmented mutants. There were obtained the suspected producers of alanine, valine and glutamine acid there. Among the many-told dependent mutants, the strains with increased production on L-lysine exist.(In Czech, English summary only)
Effect of the chloramphenicol on the submerged clavinet alkaloid biosynthesis by Claviceps fusiformis.Peer-reviewed article
S. CHOMÁTOVÁ, P. PILÁT, J. HRUBÁ
Kvasny Prum. 1986; 32(6): 135-138 | DOI: 10.18832/kp1986034
The paper deals with the chloramphenicol effect on the culture growth and alkaloid biosynthesis during the submerged cultivation on Claviceps fusiformis W1. Chloramphenicol inhibition of both the growth and production was observed in the inoculation phase (at 275 mg.ml-1) and in the production phase (at 550 mg.ml-1). The inhibition extent depends on the cultivation time. The mycelia growth and product biosynthesis suppression occur above all in the first part of the process. The product of biosynthesis remains the same or decreases according to the manner of inhibitor dosing. The alkaloid spectrum produced is not influenced...
Bacterial extracellular heteropolysaccharides.Peer-reviewed article
V. KLEKNER, E. ©ÍMOVÁ, J. ŘIČICA
Kvasny Prum. 1986; 32(6): 138-139 | DOI: 10.18832/kp1986035
The article deals with cultivation conditions for submerged production of extracellular bacterial heteropolysaccharides. There is also a short outline of a possible approach to problems ensuing from changeable rheological properties of the non-Newton medium, which are given by the forming polysaccharide and which substantially influence the transport processes in the fermentor.(In Czech, English summary only)
