Basic knowledges from foreign literature on a production of wheat beers are described. This review has been performed during the development of wheat beer in Czech breweries that has been solved by Experimental and Development Centre inPrague- Braník. The Czechoslovak machine industries significantly participated in the construction of new brewery Komárom in Hungary. During the trial operation (2nd quarter of 1988) the production has been started in all technological sections. Simultaneously the department of conical bottom vessels, that was not imported from Czechoslovakia, has been taken into operation. During acceptance tests all the projected parameters were achieved. From three types of produced beers the highest consumption has been achieved with 10,5 % Talleros beer. At present the whole annual production is 2,5 . 105 hl.(In Czech, English summary only)

Regulation of methanol oxidizing enzymes in acidotolerant methylotrophic strain Candida boidinii 2.Peer-reviewed article

The cells of Candida boidinii 2 have a high level of alcohol oxidase and catalase in peroxisomes during the growth in presence of methanol. After the cells are transferred into the medium with mannose or with a mixture of methanol-mannose the catabolic repression of the synthesis and the catabolic inactivation of both the peroxisomal enzymes start to affect. The autophage manner of peroxisome degradation has been proved by the ultrastructure study. On the other hand, with xylose-methanol mixture no repression as well as no inactivation of the enzymes occurred. Xylose and methanol are simultaneously utilized, no diauxie occurs and overall growth yield...

The anthocyanin content in coloured water saturated with CO2 during a short time storage decreases. In samples with the anthocyanin concentrations of 15,38 mg.l-1 and 23,03 mg.l-1 the decrease of pigment after eight days of storage was about 24,84 %, in coloured water saturated with CO2 only 13,52 % of the pigment was decomposed after the same storage period. The value of the degradation index (DI) increased in storaged samples. A period of the half decomposition (t1/2) was in a range of 33,27 to 38,01 days in experimental samples. The ultrafiltration equipment HF 4 SSS from the firm Alfa-Laval with its various modifications is described. Except to the processes taking place in the apparatus also cleaning, sanitation and storage of ultrafiltration carridges are described.
