The study of an application of silicious sols on the colloid beer stabilization proved the high sorption effect of its gel for nitrogen compounds of extracts made from intermediates and the final beer. In comparison with commercial silica gel adsorbents its sorption specifity was different. The stabilization effect of silicious sol was similar so that obtained with a usual quantity of tannine as it followed from full-scale experiments. The application of silicious sol resulted in no changes of sensorial beer properties. Silicious sol is quite excluded from a solution in the form of gel even when sol is applied during last production phases of beer...
Wine stabilization using membrane filtration.Peer-reviewed article
J. OTÁHAL
Kvasny Prum. 1988; 34(5): 136-138 | DOI: 10.18832/kp1988019
A present trend of a physical wine stabilization using membrane filtration is described. This procedure permits almost 100 % elimination of microorganism present. To achieve higher output and prolonged service life of membranes is necessary to perform prefiltration using EK filters. The membrane filtration can be used with cold as well as hot wine bottling. A membrane filtration together with an aseptic handling during the wine bottling ensure the high quality and stability of the product and the saving of production costs, too.(In Czech, English summary only)
Spores viability of Aspergillus oryzae IV-477, CCM 8005.Peer-reviewed article
V. VOLLEK, B. ŠKÁRKA, M. ČANIGOVÁ
Kvasny Prum. 1988; 34(5): 138-140 | DOI: 10.18832/kp1988020
The spore viability of the production strain of Aspergillus oryzae CCM 8005 and the effect of the spore age on the activity of amylolytic enzymes produced by mycelium grown from these spores were studied. The age of spores tested was: 14, 10, 5, 4, 2, 1 and 0,5 months. Except of the 14 month's age, all other spores kept all their physiological properties and were able to grow on soild clture media and produced amylases of the whole activity of 1000 - 1200 nkat.ml-1 of the cultivation medium. With the spores of 14 month's age a 48 h resuscitative phase was needed in comparison to other spores tested.(In Slovak, English summary only)
Fermentation production of kojic acid.Peer-reviewed article
P. MICHALÍK, R. HORENITZKÝ
Kvasny Prum. 1988; 34(5): 140-142 | DOI: 10.18832/kp1988021
After optimalization of fermentation medium - using Aspergilus tamarii as producing strain - raised the production of kojic acid from 22 g.l-1 to 35 g.l-1 in submerged culture during 7 days.(In Slovak, English summary only)

A review of preparated filling machines with capacities for the conditions of new bottling rooms is given. Still more protective measures resulting in a decreased noise of the machines, making more simple the handle with machines and making better the work conditions in a bottling room are taking into account.(In Czech, English summary only)
