Based on the trials for registration in the period (1998-2000), new spring barley varieties with a very good malting quality were registered as ANNABELL and SABEL in the year 2000. The ANNABELL variety has an excellent level of extract yield d.m., an optimum activity of protheolytic and cytolytic enzymes but a lower activity of the amylolytic ones. Wort content is optimal. It combines a high yield and a very good malting quality. The SABEL variety has also an excellent level of extract yield d.m., an optimum enzymatic activity and wort content. Identification of several proteins from various barley samples by the proteomic method based on combination of gel electrophoresis, MALDI-TOF mass spectrometry, and bioinformatics is an important tool for proteome analysis of barley and it can be successfully applied to the identification of malting barley varieties. The text describes some areas of methodical techniques, used and developed in the Malting Institute in Brno recently. From the point of view of general appreciation of trends, new techniques and matters of interest in malting analytics, the choice is centrally incomplete, but we believe that not quite incidental.
