This study focused on monitoring of the changes in ferulic acid content in the series barley - malt - wort. Twenty-one samples of barley varieties from four different localities were analyzed. Alcalic hydrolysis was used to release ferulic acid from the homogenized barley and malt samples. After adjusting pH, the extract was purified using the SPE. The optimized and validated Ultra Performance Liquid Chromatography with PDA detector (UPLC - PDA) was used for the analytical determination of ferulic acid in brewing materials. Ferulic acid content moved in the range of 639.0 to 1555.8 mg.kg-1 in barley, 1441.7 to 2174.6 mg.kg-1 in malt and 3.91 to 9.09...

In 2010 spring barley malting varieties Berlioz, Gladys, Lilly, and Paulis were registered in the Czech Republic.Extract content in malt of the variety Gladys was around 83.2 %. High level of proteolytic modification was exhibited by the varieties Berlioz and Lilly. Proteolytic modification in the varieties Gladys and Paulis was on the optimal level. Level of amylolytic modification was high in all the studied varieties. Wort quality of the studied varieties was on the optimal level. Cytolytic modification was medium to high. The highest values of cytolytic modification had the variety Lilly. In addition, the non-malting varieties of spring barley...

The new standard CSN 56 6610 Malt, which was printed in September 2009 replaced the standard Brewery malt from August 1992. The new standard is supplemented by related laws and standards. The standard has been greatly simplified, clearer and supplemented with new crops, which in recent years Malting evaluated and applied in the food industry. Quality indicators have been extended to extract the fine grinding of dry matter and extract the rough milling in the dry. Newly standard was included in the section on the evaluation of pilsner malt for the production of the "Czech beer".The new standard CSN 56 6610 Malt, which was printed in September 2009 replaced...
