Gas chromatography is a very important analytical technique used for the determination of flavors which content is significant not only for monitoring of quality of final product but also in testing of new technological procedures. The UV absorption spectra of model compounds, non-alcoholic beer, fresh pale and dark lager and pale lager after 10 years of storage were measured. Absorption spectra of diluted beer showed a typical UV absorption maximum around 260 nm, which responded to polyphenols and beer reductones coming from carbohydrates. The increase of absorbance in the visible region is probably caused by growing proportion of dimers and polymers of reductones and/or polyphenols but further decomposition of such compounds may also occur. Other substances e.g . α-phenylalanine provided similar spectrum pattern. Ethanol could inhibit oxidation and polymerization reactions....

The final part of the four-part series describes the post-war history of the Ostravar brewery, which was formed in 1946 by the nationalization of the original joint-stock brewery. Subsequently the brewery became part of various organisational groups, gained independence in 1990 and at present forms part of the corporation Staropramen Breweries, Plc. In 2010 a set of barley genetic resources was grown in the forage production area under the same conditions as the current varieties. Considerable differences were observed in all studied parameters in all varieties under study. The shortest length of the vegetation time was recorded in the variety Heda. It achieved full ripeness earlier than the standard varieties. The length of landraces and older varieties moved in the range from 102-125 cm. The variety Sebastian had the shortest plants (66 cm). Resistance of plants to lodging was tightly connected with the plant length. The most resistant genetic resources were peacock barley, HOR 7385, Opavský...
