In the history of beer production, yeasts of genera other than Saccharomyces occurred as part of a spontaneous fermentation. They are now mostly regarded as contaminants producing undesirable sensorially active substances and CO2. Exceptions are special beer styles (e.g. lambic and gueuze), in which the metabolic activity of non-Saccharomyces yeasts (in particular genera Brettanomyces and Dekkeraa) is a key element. Non-Saccharomyces yeast (Torulaspora, Zygosaccharomyces, Saccharomycodes) can be used for non-alcoholic and low-alcohol beers and production may contribute to the formation of interesting flavor attributes. Yeast belonging to the genera Pichia, Meyerozyma, Geotrichum or Wickerhamomyces can be applied for the biocontrol of molds during the malting process and storage of malt. The article describes the history of Beer Depots of Princes Kinsky´s Brewery in Choceň in the second half of the 19th century in towns Vysoké Mýto, Litomyšl, Brno and Vídeň (Vienna). All information were gained from the Fond of the Manor Choceň, that is now deposited in the State Regional Archive in Zámrsk, where is also partly archived correspondence between Princes Kinsky´s Brewery in Choceň and different Beer Depots of this Brewery. It is an yet unexplored issue of the history of princes Kinský´s Brewery in Choceň.
