Effect of fungicidal treatment and storage condition on content of selected mycotoxins in barleyPeer-reviewed article

The aim of the study was to determine the effect of fungicidal treatment and storage on the occurrence of mycotoxins in barley (Hordeum vulgare L.). Barley was initially inoculated with Fusarium culmorum followed by the application of fungicides (prothioconazole and bixafen). A screening of 57 mycotoxins were performed using ultra-performance liquid chromatography in tandem with mass spectrometry. The fungicide treatment affected (P <0.05) the levels of zearalenone, β-zearalenol, arternariol and alternariol-methylether that were present. Knowledge of yeast concentration is necessary for the pitching rate estimation. Centrifugation and turbidimetric method present rapid and easy methods for the determination of yeast concentration. This publication is a sequel to the study Microbiology of brewing - bacteria of the genera Bacillus, Brevibacillus and Paenibacillus and cultivation methods for their detection - part 1 (Brožová et al.: Kvasny Prum., 64(2): 50-57, 2018). We monitored the growth of 5 brewery significant strains of the genera Bacillus, Brevibacillus and Paenibacillus on solidified culture media. The publication contains photographic documentation of bacterial colonies and the use of culture media in the laboratory of brewing operations is discussed.

In most cases, the Clostridium species rank among the sporogenic obligate anaerobes, which are sensitive to bitter hop substances and acidic pH. Thus they rank among the less dangerous contaminants in brewing operations. Their increased incidence in breweries can be linked to the modernization of technologies, which reduces access to oxygen in individual production phases. In April 2017 it was exactly half a century since construction work on malting plant was completed, and in October it was 50 years since the first tonnes of Hurbanovo malt had been produced. The maltery was then a part of the state-owned enterprise Západoslovenské pivovary a sladovne, Bratislava. Once everything was completed, the maltery consisted of 64 steeping tanks, 16 Wanderhaufen system lines and four double-floor kilns. The first written document on brewing beer in Jablonné v Podještědí, conducted by the brewing-law burghers dates back to 1399. After the Thirty Years´ War there were many disputes over the right to brew between the city and the suzerain. The original location of the brewery is unfortunately unknown. In 1864, the Jablonné brewers bought the burnt-out church of the Birth of the Virgin Mary and gradually adapted it to malting and brewing purposes. The adaptation of the sacral structure to the brewery is unique in the Central European region.
