The problems of barley proteins.Peer-reviewed article
J. JANÁČEK
Kvasny Prum. 1955; 1(12): 266-267 | DOI: 10.18832/kp1955063
The present state of knowledge about proteins with special respect to proteins of barley caryopsis is rewieved. The practical findings are directly applicable to the industrial practise, being of notable importance for the production of export beers.(In Czech, English summary only).
The influence of antifoaming oil upon the utilization of oxygen in the intensively aerated fermentation processes.Peer-reviewed article
R. KUBÍČEK
Kvasny Prum. 1955; 1(12): 268-273 | DOI: 10.18832/kp1955064
The author explains new aspects in the investigation of yeast production. The use of antifoaming oil influences unfavorably the utilization of air during the aeration. Nevertheless as the air represents one of the most important parameters for the calculation of yeast production, the study of economic utilization of oxygen deserves more attention.(In Czech, English summary only).
The theory of heat exchange in dephlegmators and condensers.Peer-reviewed article
J. SUKOVATÝ
Kvasny Prum. 1955; 1(12): 274-275 | DOI: 10.18832/kp1955065
Explaining the theoretical validity of the function of dephlegmators with relation to the extensive and intensive values gained on the basis of theoretical calculation, the author suggests the importance of correct estimation of heat surface in dephlegmators and condensators.(In Czech, English summary only).
The role of lactic acid in wine technology.Peer-reviewed article
V. HULAČ
Kvasny Prum. 1955; 1(12): 275-276 | DOI: 10.18832/kp1955066
The importance of lactic acid in wine technology is explained especially in the case when grapes have - due to infavorable climatic conditions - poor sugar content and are rich in acids.(In Czech, English summary only).
