After the preliminary tests of the described methods two combinations of solution were selected as giving the best results: a)      n- butylalcohol : acetic acid : water = 4 : 1 : 5, b)      n- butylalcohol : ethylalcohol : water = 4 : 1,1 : 4,9. In continuous washing the ability of the second solution to classify sugar contents in beerwort was slightly better. In repeated intermittent washing - which method was further used exclusively - no difference was observed between the two solutions. Three methods of sulphite oxydation: Kočergov's, Winkler's and polarographic have been tested. The results underline the superiority of polarographic method. The tests with fermenting substance were aimed at determining the instantaneous and maximum concentration of dissolved oxygen during fermentation. Decrease of oxygen in the yeast suspension has been studied.(In Slovak, English summary only)
