To determine the brittleness of malt and its resistance against crushing an instrument designed for testing grain kernels has been adapted. The tester, manufactured by CHIRANA N. C., measures the force, which is required to cut crosswise a grain kernel. This force reflects the brittleness of tested grains. The mean square deviation is taken as a criterion of uniformity, indicating the homogeneity of malt. Values obtained in large-scale tests confirm, that the instrument is suitable for analyses of malt. The article deals with troubles caused by flocculation at factories producing baker´s yeast. The problems of flocculation are extremely important and must be duly understood prior to changing existing batch technology to continuous one. The knowledge of the nature of processes taking place is at present not deep enough to explain the reasons of flocculation, let alone to suggest effective countermeasures.(In Slovak, English summary only)
