Straining and sparging in a continuous brewing process.Peer-reviewed article

An adapted laboratory installation has been used to evaluate technological and chemical aspects of continuous straining and sparging. With fine-grained malt, or its surrogates, the brewing yields are very favourable and are characterized by a high utilization of headings. The time required for preparing sweet wort can be reduced by 75 % as compared with conventional methods. The continuous process has yet another advantage, viz. the content of dry matter in brewer´s grains is 2,5-times higher than in grains from sparing vats handling separate batches.(In Czech, English summary only)

The article deals with some new varieties of spring barley which have recently been developed in some European contries as the result of intensive selecting activity aimed at introducing more productive varieties of brewing barley. The Research Institute of Cereals at Kroměříž has carried out a series of comparison tests, evaluating the malting properties of new foreign varieties as well as of new foreign varieties as well as of traditional Czechoslovak ones. The results confirm that Czechoslovak varieties are still in every respect superior to all spring verieties grown inEurope.(In Czech, English summary only)

Hygroscopic properties of dehydrated fodder yeast.Peer-reviewed article

A series of tests, which were carried out to determine hygroscopic properties of dehydrated fodder yeast, disclose a substancial and intensive water absorbtion. The fodder yeast cannot be therefore stored in rooms with high relative humidity of atmosphere. Especially yeast with higher ash content require special attention as to the choice of storing rooms and packing material.(In Czech, English summary only)
