The article deals with a new method of malting known as "statical malting" which permits to obtain malt of good quality and reduces the time required to minimum. The installation is not expensive and production costs are low, too. The firm manufacturing the equipment - R & W. Paul propose to malt a batch of Czechoslovak barley to demonstrate the applicability of the method. The offer should be accepted to enable Czechoslovak experts lo get acquainted with the technology and equipment.(In Czech, English summary only)

Sporulation of yeast of saccharomyces carlbergensis family.Peer-reviewed article

The aricle deals with three methods which are used to stimulate sporulation, as well as with several methods developed for dyeing yeast spores. The best results have been achieved with sporulation on acetate agar and with malachite green as adyestuff. The influence of lysine and manganate ions upon yeast sporulation is discussed, too, since these chemicals may prove as efficient sporulation stimulants.(In Czech, English summary only)

The present situation in the production of brewing barley is characterized both inEuropeand averseas by steadily increasing areas and higher crops per hectar this being due to the increasing percentage of new varieties resistant to lodging. The article deals with the genealogy of new European varieties. Contrary to many West European varieties the Czechoslovak varieties are the result of recombination based on traditional varieties grown inCentral Europeand preserve their outstanding properties. They are excellent for malting and accomodate themselves to various ecological conditions.(In Czech, English summary only)

Treating unmalted barley with pressure steam.Peer-reviewed article

Barley heated with pressure steam was used in pilot brewing without previous malting and the results confirm that the method has many advantages over all other processes replacing malting. The required installation is simple and inexpensive, the technology is not connected with any difficulties. Taking into account the present situation in malting it can be recommended to replace malt with steamed barley up to 15 % of total amount of malt required by standard technology.(In Czech, English summary only)

Owing to the acute shortage of valuable fodder albumens from traditional sources it is necessary to find new ones and microorganisms may be one of them. From heterotrophic microorganisms yeast families deserve maximum attention because of their favourable composition, nutritive value and simple production technology based on fermentation. All the problems of the fodder albumen production have been successfully solved at the Trenčin torula plant employing a combined yeast and torula fermentation. The panel for remote control of pipelines and mechanically operated valves in wineries meets the requirements of modern technology and can be employed to advantage in many other food plants, too. The system ensures hygienic conditions and sterility, so vital in food industry. It is also very attractive from economical point of view, since it saves labour costs. The plant equipped with the panel is easy to keep clean. The general layout of wineries can be simplified and can be given more esthetic elements.(In Slovak, English summary only)
