The article deals with the chemism of volatile oils present in hops, their biogenesis and their proportions in Czechoslovak hops from the ®atec district and in several sorts of foreign hops. Heat generation in fermenting wort.Peer-reviewed article

The article deals with the generation of heat during fermentation and after - fermentation of wort. The author outlines the method which has been developed to study the heat generation and which is described in available literature, and analyses the results obtained by applying this method in a series of experiments. The research works were carried out with wort batches corresponding roughly to 25 % of standard brewing. The practical application of the method is explained by examples of calculations covering both conventional and semi - continuous fermentation.(In Czech, English summary only)
