The article deals with the relation between the biologic stability of beer, sanitary-bacteriological condition of machines and equipment in bottleries and efficiency of filtering plants. The following testing methods can be recommended as giving accurate results: determination of the total number of yeast microbes, determination of wild yeast by growing in culture medium containing iodoacetic acid, determination of wild yeast by growing in medium with crystal violet and determination of lactobacilli and pediococci by growing them in two media modified as suggested by Nakagawa.(In Czech, English summary only)

The article deals with the results of recent research works into the role of amino acids in the brewing processes, with changes taking place in various stages of the technologic cycle and with their effects in the fermentation metabolism. Amino acids are classified two various criteria being applied viz: their amounts in wort and the rate in which they are assimilated by brewing yeast.(In Czech, English summary only)

Wine industry not stick to old types of tanks used for fermenting grape must and storing wine and must install tanks made of modern materials. Well proven are large capacity, vertical tanks made of glass reinforced plastic and tanks made of stainless steel. When designing tanks it is necessary to take into account various specific requirements. So fermentation tanks must have sufficient free space required by fermenting process, storage tanks should be filled to their maximum capacity etc. Equipment used in cellars to mechanizace various handling operations should be as versatile as possible. Prior to evaluating the efficiency and specific features of various purification system the author describes principal kinds of waste water which differ from one another in the percentage of harmful impurities to be removed and in the biochemical consumption of oxigen. The authors interpretation of oxigen consumption is far from being conventional and is based both on the results of his own research works and literature.
