The  authoresses  have elaborated a reliable method for the determination of concentration of substances  which can be salted out from beer with saturated solution of ammonium  sulphate. The  method  known as "sulphate test" indicates the concentration of components which may be potential sources of colloid turbidity of beer. In the first part of his article the author outlines briefly principles of the methods applied to analyze energy consumption and find ways to savings. Practical application is shown in an example of a big brewery in GDR. In the first part of their article [see Kvasný průmysl (3)] the authors analyzed the concentration of medium, paying attention only to inhibitors present in the liquid phase. They also presented the balance of waste water. The second part of the article deals with a specific system of recirculation characterized by the presence of inhibitors both in liquid and gaseous phases. In connection with the modernization of aerating installation and with the switch to new technology, viz. to dense mash, the Trenčín yeast plant had to solve the problem of efficient defoamers. Defoaming preparation used at present, i.e. Ista D2 , though very accurately metered and added in sufficient quantities, fails in certain phases of fermentation process to suppress foam formation and it is necessary to reduce the intensity of aeration.
