The authors describe a new instrument which has been developed for studying and measuring the relation between the temperature and death rate of microorganisms. It is essentially a metallic, massive vessel both ends of which are maintained at constant temperature. Microorganisms to be tested are put into the instrument as a suspension in agar gel. Different parts of the sample are therefore exposed to different temperatures. To assess the frothing capacity of beer and wort the authors apply a new method. The sample of substrate to be tested is first frothed in a laboratory mixer and time required for returning back into liquid is measured. It has been ascertained that the restitution process to liquid state has specific features for various sorts of beer. The rate of froth disappearance depends on the temperature, whereas the mixing time and its speed have only insignificant effects. Mechanized sanitation service in a brewery can be organized in two different ways, viz.: either by operating one central sanitation station, responsible for the whole brewery, or by having several stations, i.e. one for each of the departments. Each of the systems has its specific advantages and disadvantages.
