Review on known and general factors affecting a formation and stability of the froth is given. Further, the results of preliminary studies referred to the effects of the quality of malt, surrogates of malt, brewing water and peeled rice on the frothing power are discussed. The aim of this study was not in a systematic research of all the effects of raw materials but only to obtain a base information leading to fast orientation in complex interrelations among many known and unknown variables(In Czech, English summary only)

The presence of strange substances in food products is checked more strict from day to day. The estimation of chlorinated pesticides and copper in raw materials, wort, final product and brewery effluents from pilot-plant and in commercial beers provided evidence that about 90 % of the comming active ingredients come out towards the brewery effluents. The presence of chlorinated pesticide was not determined in wort and beer. The content of copper was in a range of 0.2 - 0.3 mg. kg-1, i. e. below the permitted level.(In Czech, English summary only)

Growth and physiological characteristics of the cells Klebsiella aerogenes at steady states of continuous cultures performed in one-stage and multistage tower fermentor at various dilution rates are compared. Experiments were carried out in the minimum synthetic medium under constant values of pH 7.0, temperature of 30 °Cand KLa of 176 h-1. The paper comprises the results of research studies and practical applications of a treatment of distillery and yeast-factory effluents by irrigation. This procedure was used with respect to a reclamation of soil and a sanitary and management of water treatment. The results of the Research institute for Irrigation with dry mashed Research Station ©molovy, referred to the treatment of the effluents and slops from the distillery potatoas as a hyproduct in Bohdanov by biological and vegetative growth tests, provide evidence of the utilization of these effluents for irrigation.
