Practical findings connected with mechanisation of closed fermentation tank washing.Peer-reviewed article

The results of performance tests of high pressure spraying head (firm Kärcher) and pressure set (Platz) with reservoir, working under pressure of 5,0 MPa and spraying device (Strojobal, Ustí n. L.), working with the maximal pressure of 0,7 MPa, are presented. Final evaluation shows that both manual and mechanical washing can he used with good results. The device produced by Strojobal can be recommanded for washing of lager tanks. Washing of tanks with portable spraying head is not suitable in case of breweries with annual production higher than 800 000 hl.(In Czech, English summary only)

New yeast strains for production of feed yeasts from ethanol.Peer-reviewed article

Production yeast culture is used for studying of ethanol utilization by the yeast Candida utilis. The culture is kept in state of the yeast paste that is renewed by successive culturings. Changes in yeast morphology were observed after addition of molasses stillage distillery slops, which stimulate the utilization of ethanol, into the basic synthetic culture medium. From the production culture four yeast strains with different characteristics wore isolated. Two of them [III-5 and III-6] were determined as new yeast species and called Candida ethanolica; the others (I-1 and II-2] belonged to the yeast Candida utilis. The results obtained show, that the tested inhibitors influence strongly growth rates at pH 4,5 and 6 of C. tropicalis 78. Low bacterial contamination of the yeast growing under non aseptic conditions at pH 6 can be explained by their action - considerably prolonged lag phase and reduced growth rate of bacteria. Combinations of inhibitors enhance the inhibitory effect. The combination of80 mMformic acid and12 mMpropionic acid has been shown as particularly advantageous. It prolonged significantly the lag phase of bacteria while the lag phase of S. tropicalis 78 was not influenced at pH 6. This combination could be used as suitable protection from bacterial...
