The method of the determination of activities of α- and β-amylases using tablets S test malt amylases standard, simple and correct. This method can be applied in laboratories equipped with spectrophotometers. There is also another possibility how to obtain approximate results without the use of any spectrophotometer - using colour standards.(In Slovak, English summary only)

The genetic improvement of wine yeast with respect to an achievement of the desired technological properties is described. Within the framework of the complex utilization of by products from the agricultural production and food industry the author has subjected the by-products in the grape and wine production, e.g. grape marc, wine bottoms, rachis, seeds, cane after pruning and herbaceous shoots to the hitherto most entire analysis. Over 50 compounds belonging to triterpenoids, ignanes, glycosides, alkaloids, alkylferulates, alkylcoumarates and alkylphtalates were separated and identified. The extracts obtained possess a wide-range spectrum of biological efficiency as they exert an anti-oxidative, tonizating, adaptagenous, anti-tumorous and regenerative influence as well...
