New facts about sensorial evaluation of beer quality.Peer-reviewed article

M. ČERNÝ, J. ŠTICHAUER

Kvasny Prum. 1989; 35(7): 195-199 | DOI: 10.18832/kp1989025

A review on methods of sensorial beer quality applied inCzechoslovakiais given. Individual schemes are compared, their defects are identified and improvements are proposed. "The general scheme for sensorial beer analysis" according to Cuřín is discussed and some changes are proposed. In addition, the improved scheme would have been used by all Czechoslovak institutions with the aim to achieve interrelations between "the objective sensorial analysis" and "the subjective evaluation of beer popularity". The used of the improved method can increase the quality of beer evaluations performed in brewing industry. The use of the unit methods would improves...

Economy of brewer's grains extraction.Peer-reviewed article

T. LEJSEK

Kvasny Prum. 1989; 35(7): 199-201 | DOI: 10.18832/kp1989026

The method of H. Petersen for the calculation and the graphical estimation of the minimum extract quantity in brewer's grains from the standpoint of present costs for a water evaporation during wort boiling is described. A verification of the boundary value has to be made in any brewing house. The end of wort boiling can be made only on a base of the above mentioned boundary value.(In Czech, English summary only)

Air pollutants of nitrogen oxides.Peer-reviewed article

J. LOOS

Kvasny Prum. 1989; 35(7): 201-203 | DOI: 10.18832/kp1989027

Problems with air pollutants from combustion process of energy plants with respect to nitrogen oxide formations are described. An example of the lowering production of these harmful compounds using modern technical equipment in a foreign brewery is described.(In Czech, English summary only)

Model study of anaerobic treatment of fruit distillation stops.Peer-reviewed article

V. HLAVAČKA, V. KOSKOVÁ

Kvasny Prum. 1989; 35(7): 203-208 | DOI: 10.18832/kp1989028

An anaerobic treatment of fruit distillation stops in an anaerobic packet bed column under mesophilic conditions was tested. Under these conditions with the residence time of 25 days and the loading rate of about 3.2 kg/m3/d, the process showed the very good efficiency in the reduction of organic materials )in average 83 % as CODCr and 69.8 % as BOD5 after 2 h sedimentation). The average biogas production was 24.8 m3/m3/d i.e. 0.29 m3/kg of organic materials consumed expressed as CODCr and 2.3 m3/kg expressed as BOD5. The level of methane in the biogas was about 55.8 % but its level significantly varied....

Utilization of yeasts producing amylolytic enzymes and preparations of new strains.Peer-reviewed article

B. JANDEROVÁ, F. PŮTA, O. BENDOVÁ

Kvasny Prum. 1989; 35(7): 208-210 | DOI: 10.18832/kp1989029

The utilization of starch splitting yeasts on an industrial scale for the production of biomass, lipids an alcohol is discussed. The transfer of the ability to form amylolytic enzymes into production strains of yeasts using the induced protoplast fusion and the genetic engineering are described.(In Czech, English summary only)
