The most frequently used method for the determination of DMS or PDMS level in malt is the method of static headspace analysis. The effect of ethanol and other compounds present in extract on a response of flame photometric detector (FPD) was experimentally proved. Different procedures of DMS and PDMS extraction were tested with samples of production malts. The methods developed in Research Institute of Malting and Brewing Prague, in Institute of Analytical Chemistry, Czec. Acad. Sci., Brno and with Polar Venezuela were compared each to other. Described HPLC ion chromatography method enables to measure the nitrate content of brewing water and bottled beer. The accuracy of this method has been verified by comparison with photometric Postel's and flow injection methods. High values of correlation coefficients in extent 0.9794 to 0.9992 and other statistics has confirmed high agreement of results of all three methods. Compared with other used methods for nitrate measurement HPLC ion chromatography is considerably faster, easier to perform, more specific and enables high reproducibility of results. Non-alcoholic beverages belong to some segments of the food market in Western Europe that permanently increases. Growing trends of individual product groups of non-alcoholic beverages during last decade are evaluated. Also the most progressive trends of innovation are described. The common sign of these trends is in the health and ecological consciousness of customers.
