The tests results with respect to sensorial abilities of breweries assessment juries bear evidence of their unsufficient level of training and lacking experience in using of the triangle tests. The author suggest to increase the training level by modifying the current way of work of the juries. Recommendations are further given concerning a more ample use of the International System of Descriptive Terms for Sensorial Evaluation and Triangle Tests.(In Czech, English summary only)

Molasses stillage abundant as a waste during spirit production must be in a certain way utilized or disposed. The work gives a survey of current experience as well as alternatives with respect to stillage application or distillery plants effluents destined for biogas production. This variant of Utilization which is being considered in advanced countries as the most progressive one enjoys both environmental and energetical appraisal.
