Rapid Determination of Haze Forming Beer Substances.Peer-reviewed article

An accelerated test of haze forming beer substances determination is described. Beer is oxidized at 60 °C for 2 h with addition of 5% potassium persulfate or 40% ammonium persulfate in resultant concentration 0,5 up to 1,0 %. After cooling to room temperature the permanent haze is measured in the haze meter and after further cooling to O °C the chill haze is measured. Both values are in correlation with colloidal stability of beer, which is measured by heat shocking. Dissolved oxygen and air oxygen in bottle neck are measured separately during beer bottling. The soft drinks market in the Czech Republic achieved further significant changes in the year 1995. The development of market situation has been influenced particularly by three main factors: generally slight demand growth, which was hard differentiated according to respective groups of beverages, dynamic expansion of competition, quick concentration and professionalization of trade.(In Czech, English summary only)
