Cytolytic modification of malt secures disruption of cell wall grain and conditions even proteolytic modification and perfect hydrolysis of starch during mashing. It is considered for oné of the most important criteria of malt quality. Degree of malt modification is appraised in complexity according to average length of acrospices, mealiness, hectolitre weight, fme coarse grind difference, Kolbach index and extract 45 °C. Among the most used procedures belongs determination of malt modification by colouring methods. Power expenses represent an evergrowing portion on total production costs. During power audit carried out in several bre-weries was found out a high power consumption against bre-weries in westeuropean countries. On the basis of these results was formed project "Monitoring of efficiency of power utili-sation". In the article are presented instruments which were for this purpose at disposal and the way of power audit.
